Banana Chocolate Muffins

  • 8-10 muffins
  • Total time: 40 minutes
  • 3 very ripe bananas
  • ½ cup Greek Yogurt
  • 1 Egg
  • 1 ½ tsp. stevia or 2 packs
  • ¼ cup crushed almonds, optional
  • ½ cup peanut butter, optional
  • 1 ½ cup almond flour
  • ½ tsp. salt
  • 5 SkinnyMe chocolate squares, chopped
  • 1 Tbsp. baking powder

Preheat oven to 350 degrees.

Spray muffin tins with cooking spray.

In a food processor mix banana, stevia, egg and yogurt.

In a separate bowl, mix all dry ingredients (except chocolate and optional almonds/peanut butter).

Add wet mixture to dry mixture. Fold in chocolate and almonds.

Divide mixture evenly into muffin cups and bake 20-25 minutes or when they are golden brown. To check if they are done you can stick with a toothpick. If it comes out clean, they are done. Enjoy!
