Chocolate Almond Muffins

Ingredients
  • 1 ¾ cups all-purpose flour
  • 3 Tbsp. cocoa
  • 3 Tsp. baking powder
  • 1 cup Rice milk
  • ½ cup sunflower oil
  • 3 eggs beaten
  • 2 tsp. unsweetened vanilla
  • 2 tsp. stevia
  • ½ cups. almonds
  • 10 SkinnyMe Chocolate dark roasted almond squares (chopped)
Directions

Preheat oven to 350 degrees.

Line muffin tin with paper muffin cups. Mix flour, cocoa, and baking powder together in a bowl.

In a separate bowl mix rice milk, sunflower oil, eggs, vanilla extract and stevia.

Slowly add the liquid into the flour mixture. Add almonds and chocolate pieces.

Spray muffin cups with non-stick spray. Evenly divide the batter into the muffin cups.

Bake for 22-25 minutes or until a toothpick comes out of the center clean. Let cool. Enjoy!!!
