Chocolate Avocado Walnut Cookies
- 15 to 20 cookies
- Total time: 30 minutes
- 3 medium size avocados, ripe but not brown
- ½ cup chopped walnuts
- ¼ cup stevia
- 1 egg
- ¼ cup cocoa
- ½ tsp. baking powder
- 8 SkinnyMe chocolate squares, chopped
Pre-heat oven to 350 degrees.
In a food processor add avocados, walnuts, stevia and egg. Make sure the mixture is smooth with no chunks.
Now add the cocoa and baking powder to the mixture. Next, when adding the chocolate chunks, fold in with spatula.
When fully mixed, spoon out individual cookie portions onto cookie sheet. Make sure to flatten out the center so the cookie cooks more evenly.
Bake for 8 to 10 minutes. Cool on rack. Store in fridge. Enjoy!!
