Chocolate Banana Loaf

Ingredients
  • 5 very ripe bananas
  • 5 Tbsp. unsalted butter, melted; you can substitute 4 Tbsp. ghee for a nuttier flavor
  • 1 Egg, beaten
  • 2 Cups Almond flour, you can substitute all-purpose flour
  • 4 Tsp. Baking Powder
  • ½ Tsp. salt
  • 5 SkinnyMe chocolate squares, chopped
  • ¾ cup Sunflower seeds
Directions

Preheat oven to 400 degrees.

Grease 8 inch loaf pan.

Peel and mash bananas (lumps are fine!).

Add the melted butter and egg into the banana mixture and stir well. Add flour, baking powder and salt, mix well.

Fold in the chocolate and ¼ cup of the sunflower seeds (save ½ cup for later).

Transfer the mixture into the loaf pan and smooth out.

Top with the rest of the sunflower seeds and bake 55-60 minutes.

Make sure it is golden brown and cooked through. Let cool in pan then slice and enjoy!
