Sugar Free Chocolate Carrot Breakfast Bread

- 1 ½ cup Walnuts chopped
- 1 ¾ cup Shredded carrots
- 1 ¼ cup Whole wheat flour
- 2 tsp ground cinnamon
- ½ tsp nutmeg
- ¼ tsp cloves
- 2 tsp baking powder
- ½ tsp baking soda
- ½ cup Sunflower oil
- 1 cup Rice milk
- 2 eggs beaten
- 2 Tbsp stevia
- 1 Tbsp fresh orange juice
- 5 SkinnyMe chocolate squares (tempered)
- ½ cup Raisins (optional)
Preheat oven 350 degrees.
Spray cooking oil on a 8 ¾ X 4 ½ X 3 inch loaf pan.
Chop walnuts to a fine, fine chop. Add to bowl with carrots, flour, cinnamon, nutmeg, cloves, baking soda and baking powder. Mix well so carrots are coated with flower mixture.
In a separate bowl mix oil, rice milk, eggs, stevia and orange juice.
Then, slowly mix the liquid mixture into the tempered chocolate. Add raisins and flour mixture. Blend well. Pour into the loaf pan, smooth so even.
Bake 50-60 minutes.
Make sure tooth pic comes out clean. Let cool. Remove from pan.
Slice and enjoy!!
