Chocolate Cinnamon Thins

Ingredients (cookie)
  • 1 egg white
  • 5 Tbsp apple Puree
  • 1 ½ Tbsp stevia
  • 1 ¼ Tsp ground cinnamon
  • ¼ Cup coconut flour
  • 2 Tbsp salted butter, melted
Ingredients (filling)
  • 5 SkinnyMe chocolate squares
  • 1 ½ cup cream cheese, room temp
  • 1 Tbsp Stevia
Directions

Pre heat oven to 325 degrees.

Line cookie sheet with silicone silk mat or parchment paper.

Whisk egg whites in kitchen aid on high until it forms foam. Whisk in the apple puree, stevia and cinnamon.

In a separate bowl mix flour and butter. Gently fold in the egg white mixture.

On the silicone mat, spoon about a tablespoon circle out, making sure to smooth out so it’s even and make a 2 to 3 inch circle. Repeat until the mat is full.

Bake for 25-30 minutes until they have turned brown and look crispy. Remove from oven, let set on mat for about 5 minutes. If you move them too early they wont stay whole.

For The Filling: In a kitchen aid mixer put cream cheese and stevia, turn on low. After you temper chocolate, slowly add to cream cheese mix. Make sure it is blended fully.

Spoon mixture into a piping bag. If you don’t have a piping bag you can use a zip lock bag and cut a small side off of the bag. Pipe the mixture onto a cookie, then top with another cookie for a sandwich. Place in freezer for 10 min to let set or eat right away. Enjoy!
