Chocolate Coconut Cupcakes

  • 12 cupcakes
  • Total time: 45 minutes
  • 5 SkinnyMe chocolate squares, tempered
  • 8oz. coconut almond milk or 1 can coconut milk, chilled
  • 1 ¾ cup coconut flour
  • 3 Tbsp stevia or 3 packets stevia
  • 2 ½ Tsp baking powder
  • 1/3 cup oil
  • 2 eggs beaten

Pre-heat oven to 350 degrees.

In a large bowl mix coconut milk, stevia, flour, baking powder, oil and eggs together.

After you temper the chocolate, slowly mix the coconut mixture into the chocolate ½ cup at a time.

Grease or line your cupcake tins.

Evenly divide the muffin mixture across the muffin cups. Bake 20-25 min until golden brown and/or until a toothpick comes out clean.

Remove from oven and cool. Serve with shaved coconut flake whipped cream or butter.
