Chocolate Rib Glaze
- Enough glaze for 2 Racks of ribs
- Total time: 15 minutes
- 2 racks of ribs
- 4 SkinnyMe chocolate squares (tempered)
- 2 Tbsp. Cinnamon
- 2 Tbsp. Paprika
- 2 Tbsp. Allspice
- 2 Tbsp. Ginger
- 2 Tbsp. Dry mustard
Rinse and pat dry ribs with paper towel. Remove the skin like membrane located on the bottom or bone side of the ribs. Slide a knife under the membrane at about the second or 3rd bone. Grab the membrane with a towel or paper towel and peel off the rib.
For the glaze: Temper chocolate; cool slightly. Add cinnamon, paprika, all spice, ginger and mustard. Brush on racks.
Best to bake these ribs at 300 for 2-3 hours or until tender, continuing to glaze with remainder of chocolate mixture. Enjoy!
