Keto Chocolate Cream Cheese Cookies

- 1 Cup coconut flour
- ¼ Cup cocoa powder
- 3 SkinnyMe Chocolate squares
- 1 Tsp. vanilla
- 2 Tsp. baking powder
- ¼ Tsp. sea salt
- ½ Cup unsalted butter, softened
- 8 oz. Full fat cream cheese
- ¾ Cup stevia
- 1 Tsp. instant espresso coffee
- 4 Eggs
- ¼ Cup unsalted butter
- 1 Tsp. coconut oil
- ½ Cup stevia
- 2 SkinnyMe Chocolate squares
- ½ Tsp. instant espresso coffee
- Pinch of sea salt
Preheat oven to 350.
For the Cookie Dough:
Temper chocolate and set aside.
In a stand mixer, combined cream cheese, butter, stevia and vanilla and use the paddle attachment to mix on high. Once blended add 1 egg at a time and mix fully before adding the next. Make sure the sides are scraped and well mixed. Add the chocolate to the cream cheese mixture. Blend until fully incorporated. Turn on low and slowly mix in flour, cocoa powder, coffee and salt.
Line cookie sheet with parchment and grease. Scoop out dough to about a tablespoon each. Flatten tops to insure even baking.
Bake 18 minutes. Let cool completely.
For the icing:
In a double boiler melt chocolate and butter. Add stevia and coconut oil and stir to combine. Finally, mix in instant coffee and salt.
Once cookies are fully cooled add the icing to the top. Allow the icing to set for 10 minutes.
