Keto Brownie Cookies

- 2 Tbsp. + 1 Tsp butter, softened
- 1 Egg room temperature
- 3 Tbsp. stevia
- 1/8 Tsp. black molasses
- 1 Tsp. vanilla extract
- 6 SkinnyMe Chocolate squares, chopped
- 7 Tbsp. almond flour
- 1 Tbsp. cocoa powder
- 1/8 Tsp. baking powder
- 1/8 Tsp. salt
- ¼ Cup chopped pecans or walnuts (optional)
Preheat oven to 350.
Line cookie sheet with parchment and grease.
In a medium bowl, with a hand mixer, beat together 2 tbsp. butter, egg, stevia, molasses and vanilla extract.
In a separate bowl temper your SkinnyMe Chocolate and add the last tsp. of butter.
Beat the melted chocolate into your egg mixture. Make sure your chocolate is not too hot or it will cook your eggs.
Beat until smooth. After blended, add in your almond flour, cocoa powder, baking powder and salt. (Add optional nuts to this step if you're using them!)
Freeze batter for 10 minutes so it's easier to scoop.
Using a small ice cream scooper portion out cookie dough into cookie sheet. Flatten down tops for even cooking.
Bake for 10 minutes. Cookies should be soft when they come out. Let them cool for 15 minutes before moving.
